This Smoked Sausage and Sweet Potato Bake is a very tasty and quick fall meal that is baked in one pan. This dish is so good with the smoked sausage, sweet potatoes, apples, onions and peppers. The sauce which includes white wine, cider vinegar, brown sugar and Italian seasoning really brings out the flavors in the meat and veggies. Smoked Sausage and Sweet Potato Bake is easy to make with quick clean up, so it is perfect for busy days. As with most recipes, playing around with the ingredients to make it your own can be fun.  Variations of this Smoked Sausage and Sweet Potato Bake recipe could be made using Kielbasa or any kind of sausage you like instead of the smoked beef sausage that I used. I have even thought of trying it with one of the winter squashes like acorn to see how it turns out because we love squash. Here is a list of ingredients for this Smoked Sausage and Sweet Potato Bake Recipe:

  • 2 Rope Smoked Beef Sausage, 12-oz each
  • 2 Apples, peeled, cored and thinly sliced
  • 2 Medium size (about 2 pounds) sweet potatoes, peeled and thinly sliced
  • 1 Large white or yellow onions, thinly sliced
  • 2 Orange, red or yellow bell peppers, seeded and thinly sliced
  • 1/2 Cup golden raisins
  • 4 Tablespoons packed brown sugar
  • 1 Tablespoon Italian Seasoning
  • 1/2 cup Dry white wine
  • 2 Tablespoons Cider Vinegar
  • Salt and Pepper to taste

Steps to make this Smoked Sausage and Sweet Potato Bake Recipe:

  • Preheat oven to 450 degrees F.
  • Peel, pare and slice all the veggies and apples as stated in ingredient list.
  • Coat a 13 x 9 x 2 inch baking dish or pan with cooking spray.
  • Place all the prepared veggies in the baking dish.
  • In a small bowl mix together the 4 Tablespoons packed brown sugar, 1 Tablespoon Italian Seasoning, 1/2 cup Dry white wine, 2 Tablespoons Cider Vinegar,  and Salt and Pepper to taste stirring until the sugar is dissolved.
  • Cut sausage into slices about 1 to 2 inches thick.
  • Add sausage slices to the pan with veggies.
  • Pour the brown sugar mixture over the veggies and sausage.
  • Stir to coat all.
  • Place baking dish in preheated oven and bake for 20 minutes.
  • Remove from oven, stir to moisten all ingredients and place back into the oven for another 20 minutes or a little more if needed until sweet potato slices are tender.
  • Remove from oven.
  • Serve and Enjoy! We love a nice crusty bread and salad with this dish.
