  • 1 1/2 to 2 pounds large peeled and deveined shrimp, leave tails on
  • 1 pound Andouille smoked sausage
  • 4 ears of corn on the cob, husked
  • 1 1/2 pounds red or yellow potatoes, cut in 2-3 inch pieces (peeled if you like)
  • 4 -6 cloves minced garlic (to your taste)
  • Juice from one lemon
  • 5- 6 Tablespoons Old Bay Seasoning
  • Salt and Pepper to taste
  • 1/2 stick (1/4 cup) melted butter, plus 1 stick (1/2 cup)to brown for later
  • Chopped fresh parsley for garnish
  • Lemon wedges for squeezing over dish
  • 8 or 10 pieces of foil torn off at about 12 inches long

  • Preheat oven to 400 degrees F.
  • Clean cut each ear of corn into 4 pieces, then cut in half lengthwise.
  • Cut potatoes into 2 to 3 inch pieces (peeling is optional)
  • Cook potatoes and corn in boiling water for 10 minutes.

  • Add about 1/10 of mixture to the the center of each foil piece (dividing as evenly as possible).

  • Place foil packets on a large baking sheet and bake in preheated 400 degree F oven for 20 minutes or if you like you can cook on a preheated medium to high heat grill for about 8-10 minutes on one side and turn to cook for an additional 8-10 on other side.
  • While the packets are cooking melt the other 1 stick (1/2 cup) of butter in a small pan over medium heat, cook while gently stirring for 3-4 minutes more until the butter just turns a golden color (be careful to stop cooking at golden stage so you don’t burn it).
  • Chop parsley and cut lemon wedges.
