This Sauteed Squash And Kale recipe is a delicious way to serve winter squash and kale as a low cost side  dish or alone as a light meal. If you like squash and greens this will quickly become a favorite go to recipe when you want comfort food, but also want to keep it on the light side. As with most recipes, playing around with the ingredients to make it your own can be fun.   I just love how quick and easy this is to make. Variations of this sauteed squash and kale recipe could include changing the smoked paprika to chili powder or add a dash of cumin. I prefer butternut squash, but my hubs likes acorn and with just a little time adjustment on the cooking of the squash is works just as well. I find the acorn squash does not seem to take as long to get tender. If you don’t like the touch of sweetness it brings you could leave out the brown sugar. I like it because if seems  to mellow out the kale a little, but it is really a matter of taste.   • 2 pounds Butternut or Acorn Squash peeled, seeded and cubed
  • 3 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • Salt and Black Pepper to taste
  • 1/4 teaspoon Smoked Parprika to taste, optional
  • 1 teaspoon brown sugar
  • 1/8 teaspoon ground red pepper, a little more or less to taste
  • 3 cups Kale, cleaned and chopped or purchased chopped
  • Feta cheese or a little crisply cooked crumbled bacon to sprinkle on top if desired

Steps to make Sauteed Squash And KaleRecipe:

  • Heat 2 tablespoons of butter and 1 tablespoon olive oil in a large skillet over medium high heat (I like cast iron, but any large skillet with room enough to not overcrowd the squash will do) If using a smaller skillet sauteing in two batches will work fine.
  • Add Squash to the skillet and give a sprinkle of salt to taste.
  • Cook for several (usually 7 to 10) minutes turning with spatula until lightly browned in spots and just getting tender.

  • Add paprika, brown sugar and red pepper while continuing to stir and cook for a few more minutes.

  • Add the other tablespoon of butter, tablespoon olive oil and chopped kale to the pan.
  • Gently stir and saute for another few minutes just until kale is wilted and slightly tender.

  • Remove to a serving dish and sprinkle with cheese or bacon if desired, or just leave as is.
  • Serve and enjoy!
