Easy and Delicious Roasted Pumpkin Seeds Recipe

During the fall season when we are busy making our favorite seasonal pumpkin dishes such as Pumpkin Beef Stew, we want to be sure to use as much of the pumpkin as possible and this delicious roasted pumpkin seeds recipe is a great way to accomplish that. Be warned with the delicious toasty salty roasted flavor they are addictive. We hope you enjoy them as much as we do!

Our favorite way to eat these roasted pumpkin seeds is just salted, but every once in a while  after I spread them on the baking sheet I sprinkle on a little red pepper or pumpkin pie spice mixed with just a spoon of sugar. As always your imagination is the only limits to the different flavors you can bring to any recipe.

This is what you will need to make your roasted pumpkin seeds recipe:

Seeds from one pumpkin

Water, just enough to cover seeds for soaking

1 tablespoon salt

1 tablespoon butter

Directions:

  • Clean pumpkin seeds, separating from pumpkin flesh and strings.
  • Place seeds in a large mug or small bowl.
  • Add just enough water to cover and add the salt
  • Soak for a few hours or overnight if desired.
  • Drain and pat dry.
  • Stir seeds in the tablespoon of melted butter to coat
  • Spread in a single layer on a baking sheet.
  • Place in oven on 300 degrees for approximately 35-45 minutes until they start to turn gold and are nice and toasty.
  • Remove from oven.
  • Cool and enjoy!
