A friend of mine got me interested in creating a pumpkin black bean soup recipe for a fall soup idea. At first I wasn’t sure it was a combination I would like, but I did think my husband and son would enjoy it. I decided to play around with some ingredients and give it a try. I could not have been more wrong in my thinking. I was certainly right about the guys liking it, but I was very surprised to find that I loved it too. This soup is going on my list of comfort foods! Thank you Michelle for giving me this wonderful idea.

This Pumpkin Black Bean Soup recipe is definitely a keeper for a great Fall or Winter meal at home. This creamy full of flavor soup is perfect for the cool season. Even before the smooth blended version, it has the creaminess of the beans and pumpkin and the zesty flavors of the tomatoes, cumin and balsamic vinegar. Pumpkin Black Bean Soup Recipe

This pumpkin soup is so easy and inexpensive to make that you’ll be amazed at how great it tastes. It can be served chunky or if you prefer, the whole pot can be run through the blender a second time for a smooth and creamy version. I personally like the creamy version best, but I know we all have our  own taste when it  comes to the texture of our foods We have provided instructions for both versions here. Even when blended and smooth you will be able to taste each individual flavor of the beans, pumpkin, tomatoes, garlic and onion with just a hint of cumin and the wonderful sweetness in the flavor of the reduced balsamic vinegar.





This is what you will need to make this Pumpkin Black Bean Soup Recipe:

3 cans black beans 15 oz, rinsed and drained
1 can diced tomatoes 15 oz
1 medium onion, chopped
4 garlic cloves minced
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon freshly ground black pepper
3 thick slices of bacon or 4 regular slices, chopped
4 cups chicken broth
1 can pumpkin pureé (approximately 2 cups)
¼ cup balsamic vinegar, reduced down to about 1 tablespoon*
*to reduce the Balsamic, bring to a boil and then simmer until a syrup consistency. Stir continuously while over heat so it does not burn. Remove from heat and allow to cool.

Instructions:

  • Add two cans of beans and tomatoes to blender and pulse until smooth. (leave the third can for later)

  • Heat a large pot add the bacon, onion, garlic, cumin, salt, and pepper and cook over medium heat stirring until bacon is cooked and onion is softened.

  • Drain bacon and onion mixture and return to same pot.
  • Stir in blended bean and tomato mixture stirring to blend well.
  • Add the third can of beans, chicken broth, pumpkin, and reduced balsamic vinegar.
  • Simmer uncovered for about 25 minutes, stirring occasionally until desired thickness.
  • After simmering you may either serve the chunky Pumpkin Black Bean Soup recipe version as is or if you prefer the creamier version just run it in the blender until smooth. You may need to do this in batches depending on the size of your blender.

  • Either version may be garnished with a lime wedge and/or a dollop of sour cream, whichever you prefer.  Serve with some freshly made Pizza Dough Garlic Rolls , even better!
