This Pumpkin Banana Bread Recipe is one of my favorites! There is nothing better on a cold morning than a nice cup of coffee or tea with a warm slice of pumpkin banana bread slathered with butter or cream cheese spread.

This pumpkin banana bread recipe makes two loaves. These work perfectly stored in an airtight container in the fridge so you can grab a slice for breakfast or a coffee break during the day. This was the first batch this year and the smell of it baking was glorious. We enjoyed the aroma almost as much as eating it. I love to use walnuts or pecans to give it a little texture and sometimes even throw in a few raisins, chopped dates or dried cranberries.

Here is what you will need to make this Pumpkin Banana Bread Recipe:
1 can pumpkin puree 15 ounce
2 bananas mashed
1 ²⁄³ cups sugar
²⁄³ cup vegetable oil
2 teaspoons vanilla
4 eggs
3 cups all-purpose flour
½ cup coarsely chopped nuts
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon baking powder
1 teaspoon pumpkin pie spice

Directions

  • Preheat oven to 350ºF.
  • Spray two 8 ½x4 inch loaf pans with baking spray.
  • Stir together pumpkin, banana, sugar, oil, vanilla and eggs in large bowl until well blended.
  • Mix in remaining ingredients.
  • Pour into prepared pans.
  • Bake 8-inch loaves 45-60 minutes until toothpick inserted in center comes out clean.
  • Cool 10 minutes.
  • Loosen sides of loaves from pans and invert over wire rack to remove from pans.
  • Turn right side up and cool on racks for about 2 hours before serving.
  • For best results and longer life of bread store in airtight containers in the fridge and then warm in toaster or oven to serve.
