This Pasta Fagioli Soup Recipe is a must make at our house. It is pretty easy and frugal to make with common easy to get ingredients. The guys love this hearty soup on chilly days. Pasta Fagioli soup is bursting with good flavors. The aroma that fills the air leaves you filled with anticipation. You will not be let down with this one. I just made a pot of this Pasta Fagioli Soup last week and they are already asking for it again. As with all recipes most of the fun is playing around with the ingredients to suit your taste and make it your own. This Pasta Fagioli Soup recipe is no different. I see lots of variations that could be made. If you don’t have Italian sausage on hand you can substitute ground beef with good results. My son prefers the ground beef version. I can also see this made with ground chicken or chicken sausage. If I have fresh spinach in the house I will throw a little handful of chopped spinach into the soup at the same time I add the pasta. By all means, play with the spices and herbs to obtain that perfect flavor for your family. Pasta Fagioli Soup Recipe

  • 1 pound Italian Sausage
  • 1 Tablespoon olive oil
  • 1 medium to large onion, chopped
  • 4 stalks celery, thinly sliced or chopped
  • 3 carrots, chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 2 cans tomatoes, 15 oz
  • 1 jar pasta sauce, about 20 ounces
  • 1 can light red kidney beans, 15 oz, drained
  • 1 can great northern beans, 15 oz,  drained
  • 1 teaspoon oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon thyme
  • 1 teaspoon parsley
  • salt and pepper to taste
  • 1 cup Ditalini pasta
  • A few drops of Tabasco if desired for flavor
  • Parmesan cheese to sprinkle on top (optional)

 

Steps to make Pasta Fagioli Soup Recipe:

  • Remove sausage from casing, separate and crumble as you brown it for about 3-5 minutes in a large stockpot.
  • Remove sausage from pot, drain and set aside.
  • Add olive oil, garlic, onion, carrots and celery to the pot and continue cooking until onion is translucent.
  • Stir the sausage and  the remainder of the ingredients into the pot with veggies.

Pasta Fagioli Soup

  • Bring to a boil, reduce heat, cover and simmer for about 15-20 minutes until vegetables are tender.
  • Add pasta and continue to cook for about 10 more minutes until pasta is tender.
  • If you see you would like your soup a little thinner at this point add some water.
  • Spoon into soup bowls.
  • Sprinkle with grated Parmesan cheese if desired.
  • Serve with your favorite bread and enjoy!
