Old Fashioned Potato Salad Recipe

This is my favorite old fashioned potato salad recipe. It has just the right amount of tangy, sweet and crunchy texture for us. This recipe has been around for years. I always loved when my mom made potato salad. There is nothing quite like good old fashioned potato salad when you are in the mood for something Southern and comforting. It’s even better with barbecued ribs and fresh corn on the cob.  Here at our house no weekend barbecue or family get together is complete without it. If your family likes potato salad as much as mine does you might want to make a double batch. I have a hard time getting to the leftovers before the guys do, so I try to hide a little bowl in the back of the fridge for the next day.

As with all recipes part of the fun is using your imagination to change it up a little bit to make it your own. This one is no different. I sometimes pour a little sweet pickle juice in mine to give it a little more sweetness. Sometimes I add a little dill when I am in the mood for a flavor twist. I added a few olives on top of this batch for color and flavor. I tend to use whatever I have handy to decorate the top a little. It can be sliced boiled eggs, a little paprika, or even dill sprigs. Here is what you will need to make this Old Fashioned Potato Salad Recipe:

Old Fashioned Potato Salad Recipe

  • About 6-7 medium sized potatoes, peeled and cubed
  • 2 hard boiled eggs, chopped (optional)
  • 2 stalks of celery, diced
  • 1 small onion, peeled and diced
  • ¾ cup mayonnaise, a little more if needed
  • ¼ cup sweet pickle relish
  • 1 dill pickle, diced
  • 2 teaspoons yellow mustard
  • Salt and pepper to taste
  • Olives to decorate top (optional)

INSTRUCTIONS: 

  • Place potatoes in a medium sized pan, cover with water and boil until tender (not mushy).
  • Drain potatoes and place in a large bowl.
  • Place eggs (if using) in the bowl with potatoes.
  • Place all other ingredients in a medium size bowl to mix well.
  • Pour over potatoes and eggs stirring just to coat.
  • Add olives, optional.
  • Cover and refrigerate at least an hour until ready to serve.
  • Serve and Enjoy!
