Macaroni Salad Macaroni Salad, A Refreshing Warm Weather Dish!

This is a refreshing macaroni salad recipe made with pineapple, green peppers, pimiento and onion.   It makes a great side for those warm weather barbecues and social gatherings. The pineapple with juice helps  keep it moist while adding just the right amount of sweetness. It also gives it a little tropical twist that we like. Now if you are looking at the pictures of this summer salad and wondering if the bowl I am using says Merry Christmas you are correct. I have had that bowl for years. It is heavy, deep and easy to work with, so it quickly became one of my favorite mixing bowls. It also makes for interesting conversation around the picnic table.

As with all recipes the fun part is adjusting the ingredients to suit your taste and make it your own. This macaroni salad recipe is no exception. One of my favorite variations is to add a can of  whole kernel corn  and a can of tuna to this macaroni salad. This makes a delicious budget-stretching summer meal. If you use that idea be sure to drain them well. We like this version served on top of lettuce with a couple slices of tomato and a piece of this homemade Parmesan Herb Flatbread. Sometimes I don’t feel like the heaviness of the mayo so will change it up a little and use Italian dressing in its place.

NOTE: This macaroni salad recipe makes a large bowl because we are a large family. It can easily be cut in half if you do not need that much.

Here is what you will need to make this Macaroni Salad Recipe:

1 box elbow macaroni, 16 oz
1 can pineapple tidbits in pineapple juice, 20 oz, do not drain
1 small jar chopped pimiento
1 small onion diced
1 small green bell pepper, diced
1 stalk celery, diced
¾ cup mayonnaise, you may need to add a little more after it sits in fridge
salt and pepper to taste

INSTRUCTIONS:

  • Cook the macaroni according to package directions.
  • Rinse with cool water and drain.
  • Dice all the veggies while the macaroni is cooking.
  • Place macaroni in large bowl add all other ingredients and stir just until
    everything is mixed together.
  • Cover and refrigerate for a couple hours before serving.
