Perfect For a Fall Meal ~ Lemon Chicken Orzo Soup Recipe

This Lemon Chicken Orzo Soup Recipe is full of healthy veggies, chicken broth, bits of chicken along with garlic and  lemon juice for a little zing. This is a real cold fighter here at our house.  It’s great on cool days to warm you up and also full of good cold preventative and fighting ingredients. Another great thing  about this soup is that it makes up quick and easy all in one pot with not much required in the way of preparation so would even be suitable for a busy workday meal. It’s also very frugal to make. I serve this with the flatbread recipe and lemon pudding cake for dessert (see photo below). Between my couponing and sale shopping it costs less than $10 for me to prepare the whole meal.

Lemon Chicken Orzo Soup Recipe

We love the orzo served in the bowl and the soup ladled over it, but if you would rather place it directly in the soup pot at the end of cooking I have done that with great success. It makes it easier if you want to serve in a bowl on the table. We like ours served separately because we all have different taste on how soupy or thick we like it.

As always the only limit to creating new and exciting recipe variations is your imagination. I have used small bits of leftover ham to make this and it was  wonderful. In the near future I am going to try substituting the chicken broth and meat with beef broth and leftover steak and possibly change the lemon juice to lime juice for a different flavor combination.

This is what you will need to make this Lemon Chicken Orzo Soup Recipe:

3 cups of chicken broth
5 garlic cloves, peeled and halved
2 tablespoons chopped parsley
1 large onion, cut in 1-2 inch strips
2 medium Bell peppers, any color, cut into 1-2 inch strips
3 plum tomatoes, cut in 1-2 inch strips
1 tablespoon olive oil
2 tablespoons fresh lemon juice
Salt and pepper to taste
1 cup of cooked chopped chicken meat
2 ½ cups cooked orzo

  • Lemon Chicken Orzo Soup RecipeAdd all ingredients except orzo and chicken meat to a medium stockpot.
  • Bring to a boiling point.
  • Reduce heat and simmer for about 20 minutes until vegetables are just tender, not mushy.
  • Add cooked chicken to the pot during the last five minutes of cooking.

  • Place cooked orzo in each bowl and spoon soup over it.
  • Serve.
