Italian Pasta Salad ~ Easy Make Ahead Meal

Italian Pasta Salad served with soup and a nice crusty bread is a nice meal for us during the summer months when we don’t want big heavy meals. We love the flavors in this salad. The meat, cheese, veggies and Italian dressing really wakes up the pasta in a great way. It is also one of my favorites to make when I know I will not be cooking for a day or two. This recipe makes enough for a couple of good meals. I can make this while I am making another meal, store both in the fridge and know the guys will have a good lunch or dinner with very little effort while I am busy. 

As with all recipes part of the fun is adjusting the ingredients to make it your own. This Italian pasta salad recipe is a great one to play around with. There are so many things which can be added or switched around to suit ones individual taste. I like to substitute sun dried tomatoes for the fresh ones sometimes depending on which I have on hand. The salami is something else I change up according to which I have. Sometimes I have a stick and sometimes sliced. Either works just fine. The provolone cheese can be changed to mozzarella. I love kalamata olives and use them instead of the ripe olives sometimes. I also make a version with cubed cheddar cheese and fresh broccoli and carrots. Here is what you will need to make this Italian Pasta Salad Recipe: 

Italian Pasta Salad

1 box seashell pasta, 16 oz.
¼ pound hard salami, slices or cubed
¼ pound slice pepperoni
½ pound provolone cheese, cubed
4 plum tomatoes, seeded and chopped
3 stalks celery, chopped
1 medium bell pepper, chopped
1 small can sliced ripe olives
1 cup Italian salad dressing
½ teaspoon ground black pepper
1 teaspoon pasta/pizza seasoning mix

  • Cook pasta according to package directions.
  • Rinse with cool water and drain.
  • Place pasta in a larger bowl.
  • Add all other ingredients, tossing to coat.
  • Chill for at least 12 hours before serving.
  • Serve chilled.
  • Enjoy!
