This Hominy Casserole Recipe is a slightly spicy cheesy dish. This is a rich comfort type side dish which goes well with any meal or is good for lunch with a side salad. The combination of the onions, peppers, cheese and hot sauce does wonders for the flavor of the hominy because they really bring out the corn flavor. This is a rich Heavenly comfort type side dish that goes well with any meal. If you have never had hominy or don’t care for it plain, this recipe will change the way you think about hominy. This dish goes great with a nice roast meat, beef, pork or chicken. And of course everything is better with a big glass of Southern Sweet Tea or maybe you would prefer a Delicious Fresh Mojito. As with most recipes, playing around with the ingredients to make it your own can be fun. Variations of this Hominy Casserole recipe could include adding any other vegetables you like such as peas or maybe beans. I think a few diced tomatoes would also make a nice addition. You could also add a little leftover roast chicken to turn it into a main dish served with a side salad. If you rather not have spicy food you could certainly leave out the wing sauce. You could also experiment with different types of cheese, such as Pepper Jack or horseradish cheddar. Here is a list of ingredients for this Hominy Casserole Recipe:

  • 1 Can Hominy (15-16 ounce)
  • 4 Strips Bacon, crisp fried, regular cut (I use two strips of the thick cut)
  • 1 small onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese, plus handful to sprinkle on top (I use 4 cheese blend)
  • 2 tablespoons of Texas Pete Wing Sauce (optional) I use this brand, but you may prefer no spice.
  • 2 tablespoons plain bread crumbs
  • Salt and Pepper to taste

Steps to make Hominy Casserole Recipe:

  • Preheat oven to 375 degrees F.
  • Cook bacon to a nice crispy stage and drain on paper towel.
  • Add onion and bell pepper to the bacon grease and saute until just crisp tender, but not mushy.

  • Add Hominy to the pan and stir to mix.

  • Stir in the 1/2 cup heavy cream.

  • Add salt and pepper to taste.
  • Add 1 cup cheese and wing sauce. (leave out wing sauce if you prefer)

  • Stir until cheese is melted and bubbly.
  • Stir in the bacon pieces.
  • Pour into a buttered baking dish.
  • Top with a handful of shredded cheese and breadcrumbs.
  • Bake for about 20 to 25 minutes in preheated 375 degrees F oven until the cheese is melted and breadcrumbs are lightly browned.
  • Remove from oven.
  • Serve and Enjoy!
