Asparagus Vinaigrette Salad Recipe
This Asparagus Vinaigrette Salad is light and refreshing. The mustard in the Vinaigrette dressing gives it a nice tang that is just enough to complement the mild salad ingredients. It is quick and easy to make and can be served as a side or as a light meal served with warm crusty bread.

  • 1 ½ cup olive oil
  • ½ cup balsamic vinegar
  • 2 teaspoons Dijon mustard
  • salt and pepper to taste
  • Fancy mixed lettuce/greens
  • 4 sweet mini peppers sliced into matchsticks
  • chopped red onion
  • 2 pounds fresh asparagus, steamed just to crisp tender, drained well
  • 2 boiled eggs
  • 10-12 grape tomatoes
  1. In a large cup or bowl whisk together the olive oil, vinegar, mustard, salt and pepper.
  2. Add onions and peppers to the bowl.
  3. Place asparagus in a glass dish.
  4. Pour the dressing over the asparagus.
  5. Cover and place in refrigerator to chill for a few hours.
  6. When ready to serve make a bed of lettuce (whichever variety you like) in a serving dish or platter
  7. Arrange Asparagus mixture on top of the lettuce.
  8. Add the tomatoes and sliced boiled eggs.
  9. Drizzle some of the dressing from the bowl onto the salad.
  10. Serve and Enjoy!
