Roasted Sweet Mini Peppers
Perfectly roasted mine sweet peppers to use in your recipes.

  • 1 small 6 oz package sweet mini peppers, washed and patted dry
  • Olive oil
  • A pinch of sea salt
  1. Preheat oven to 425 degrees.
  2. Rub peppers with a little oil and place on a baking sheet that has been covered with foil.
  3. Sprinkle with sea salt.
  4. Place in oven for 8 minutes, turn and bake another 10 minutes being sure to watch and turn as necessary.
  5. Remove from oven.
  6. Cool slightly and remove stems. They should pull our easily.
  7. Split the peppers lengthwise and scrape out the seeds. Don’t worry if you miss a few.
