Shrimp Boil In Foil Packets Recipe ~ Delicious One Pack Meal With No Big Cleanup after. This is so simple and quick to make, but is sinfully delicious with the seafood, butter and garlic flavors front and center.

  • 1½ to 2 pounds of peeled and de-veined shrimp
  • 1 pound Andouille smoked sausage
  • 4 ears of corn on the cob, husked
  • 1½ pounds red or yellow potatoes, cut in 2-3 inch pieces (peeled if you like)
  • 4 -6 cloves minced garlic (to your taste)
  • Juice from one lemon
  • 5- 6 Tablespoons Old Bay Seasoning
  • Salt and Pepper to taste
  • ½ stick (1/4 cup) melted butter, plus 1 stick (1/2 cup)to brown for later
  • Chopped fresh parsley for garnish
  • Lemon wedges for squeezing over dish
  • 8 or 10 pieces of foil torn off at about 12 inches long
  1. Preheat oven to 400 degrees F.
  2. Clean cut each ear of corn into 4 pieces, then cut in half lengthwise.
  3. Cut potatoes into 2 to 3 inch pieces (peeling is optional)
  4. Cook potatoes and corn in boiling water for 10 minutes.
  5. Cut sausage into 1-inch slices.
  6. Rinse and clean shrimp.
  7. Add shrimp, sausage, corn and potatoes to a large bowl.
  8. Add in Old Bay seasoning, minced garlic, salt and pepper, juice from one lemon and ½ stick melted butter to the bowl with shrimp mixture and stir around to coat evenly.
  9. Tear off your foil pieces.
  10. Add about 1/10 of mixture to the the center of each foil piece (dividing as evenly as possible).
  11. Fold up sides of foil sealing as you go.
  12. Place foil packets on a large baking sheet and bake in preheated 400 degree F oven for 20 minutes or if you like you can cook on a preheated medium to high heat grill for about 8-10 minutes on one side and turn to cook for an additional 8-10 on other side.
  13. While the packets are cooking melt the other 1 stick (1/2 cup) of butter in a small pan over medium heat, cook while gently stirring for 3-4 minutes more until the butter just turns a golden color (be careful to stop cooking at golden stage so you don't burn it).
  14. Chop parsley.
  15. When time is up remove foil Packets from the oven, be careful of the steam when opening.
  16. Open packets and top each with the chopped parsley, a little of the browned butter and lemon wedges.
