This Homemade Peanut Brittle recipe produces a wonderful buttery nutty treat that is addictive. I have been known to eat a whole bag while watching movies. You might want to make this candy in double batches so you have plenty to share with friends and family. The best part is that it is pretty easy and cheap to make your own homemade peanut brittle. Most of us keep the ingredients in our kitchens, except for maybe the peanuts.

  • 1½ teaspoons baking soda
  • 1 teaspoon water
  • 1 teaspoon vanilla
  • 1½ cups sugar
  • ¼ teaspoon salt (optional)
  • ⅛ teaspoon ground red pepper (optional)
  • 1 cup water
  • 1 cup light corn syrup
  • 3 tablespoons butter, softened
  • 1 pound shelled raw peanuts (not roasted)
  1. Heat oven to 200 degrees F. Rub two cookie sheets with butter and keep warm in oven.
  2. Mix baking soda, 1 teaspoon water and the vanilla in a small cup or bowl and set aside.
  3. Mix sugar, 1 cup water, ¼ teaspoon salt, the ⅛ teaspoon red pepper (if using) and the corn syrup in a medium saucepan, and cook over medium heat, stirring occasionally, to 240 degrees on candy thermometer or until a small amount reaches soft ball stage when dropped in ice water.
  4. Stir in butter and peanuts and continue to cook stirring constantly until it reaches 300 degrees F or when small amount of mixture dropped into very cold water separates into hard, brittle threads. Be sure to stir and watch so it does not burn.
  5. When it reaches the correct temperature Immediately remove from heat.
  6. Quickly stir in baking soda mixture until light and foamy.
  7. Pour half the candy mixture onto each cookie sheet spreading quickly to about ¼ inch thick. I use two forks to lift and pull when spreading.
  8. Cool completely.
  9. Break into pieces.
  10. Store in sealed container or separate into zipped plastic bags for easy sharing.
