This Cinnamon Roll Casserole recipe is great as an alternative to French toast for breakfast, cool with a cup of coffee in the morning or as a warm dessert alone or with vanilla ice cream. It's like bread pudding, French toast and cinnamon rolls all wrapped in one delicious gooey dish.

Ingredients
  • 2 Cans Cinnamon Rolls, approximately 17 oz, refrigerated
  • ¼ cup butter
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1 Cup Heavy Cream
  • 6 eggs
  • 1 cup Maple Syrup
  • 1 ½ cup pecan pieces (optional
  • ¼ cup raisins (optional)
Instructions
  1. Preheat oven to 375 degrees F.
  2. While oven is preheating add butter to 13x9 inch glass baking dish or pan and sit it in the oven until butter is melted.
  3. Open Cinnamon Rolls, separate and cut each roll into 8 pieces.
  4. Set icing aside.
  5. Whisk Cream, eggs, vanilla and cinnamon until mixed well in a medium sized bowl.
  6. Add the cut up cinnamon rolls to the baking dish with the melted butter.
  7. Pour Cream Mixture evenly over the roll pieces.
  8. Sprinkle pecan pieces and raisins (if used) evenly over the top.
  9. Drizzle Maple Syrup over entire casserole.
  10. Bake for 25 to 30 minutes until set and golden brown.
  11. Remove from oven and allow to cool for about 15 minutes.
  12. Soften icing in Microwave for 10 to 15 seconds.
  13. Drizzle reserved icing evenly on top.
  14. Serve and enjoy!
