This Chicken, Pineapple & Peppers Slow Cooker Recipe is a flavorful  dish with just enough crushed red pepper, pineapple and brown sugar to accent those flavors without being too sweet or too spicy. The pineapple and sweet peppers give it a fun tropical flare. This chicken is wonderful served over your choice of white, yellow, or fried rice. Other than the fact that it is delicious to eat, the best part of this recipe is how easy it is to make. Prep time it about 10 to 15 minutes for cutting and preparing the veggies, then just put everything into the crock pot and do other things while the house fills with a warm and delicious aroma.  In our house we love having leftovers for lunch, but sometimes there is nothing leftover when I make this. As with all recipes most of the fun is playing around with the ingredients to suit your taste and make it your own.  If you like a little more sweet and sour flavor you could always add a little more brown sugar and vinegar, and even a few Maraschino cherries .   • 2 pounds boneless skinless chicken breasts
  • 1 medium onion chopped
  • 10-12 Sweet Mini Peppers, seeded and halved
  • 1 Can Pineapple Chunks ( 18 ounce), drained
  • 1-2 teaspoons crushed red pepper flakes (to your spice taste)
  • 1 teaspoon salt
  • 2 teaspoons minced garlic
  • 2 tablespoons brown sugar
  • 3 tablespoons sweet red chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 1/4 cup water
  • 3 tablespoons corn starch

 

Steps to make Chicken, Pineapple & Peppers Slow Cooker Recipe:

  • Half and seed peppers, chop onion and mince garlic.

  • Add chicken breasts to bottom of crock pot in a single layer if possible.

  • Sprinkle with crushed red pepper flakes and salt.

  • Add pepper halves, garlic, onion and pineapple on top of chicken and pepper.

  • Add Soy Sauce, brown sugar, vinegar, water and Sweet Chili Sauce.

  • Place the lid on your cooker and cook on low for 4 to 5 hours or high for about 3 hours. Cooking times may vary depending on how hot your cooker runs, so check for tenderness of your chicken breasts.
  • About 20 minutes before you are ready to serve if you have cooked on low set the cooker to high.
  • Once the broth in cooker begins to bubble ladle out about a cup of the hot liquid into a glass bowl or measuring cup and mix the 3 tablespoons of cornstarch into this liquid until smooth. Be sure to replace lid to cooker after spooning out the liquid you need.

  • Remove cooker lid and stir the cornstarch mixture into the remainder of the sauce.
  • Replace lid and allow to simmer for a few minutes until desired thickness is reached.

  • Once your sauce has thickened a little take the lid off the cooker and use two forks to pull apart the chicken breasts and stir into sauce.
