This Bruschetta with Mozzarella Cheese Recipe  is a combination of sweet and tangy  Balsamic glaze and vinegar that will keep them coming back for more. The flavors of the garlic and basil really shine through and complement each other perfectly. This is a super easy to make  elegant looking dish which can be served as an appetizer for any occasion, as a snack or a quick light lunch. This is a dish that my husband loves and asks for often. Even my son who is not a big tomato eater loves this Bruschetta. If you are feeding more than 4 be prepared to make a double batch. These little gems go fast. As with all recipes most of the fun is playing around with the ingredients to suit your taste and make it your own. You might like  to add a little more or  less garlic  and basil or more black pepper. I used mozzarella cheese, but you could use others such as provolone or any mellow easily melted cheese.  We like nice bite size pieces, but you may wish to cut your tomatoes a little smaller than I do. Bruschetta with Mozzarella Cheese Recipe

  • 2 pints of your choice of grape tomatoes or (I like Heirlooms as shown in pictures)
  • 2 to 3 garlic cloves, minced
  • 5 basil leaves, chopped
  • 1 Tablespoon Balsamic glaze (I have used reduced Balsamic vinegar and add just a touch of honey with good results)
  • 2 Tablespoons Balsamic vinegar
  • 1 Tablespoon extra light olive oil
  • salt and black pepper to taste
  • 1 pound Mozzarella cheese, sliced into enough  pieces to match bread slices
  • 1 French baguette, diagonally sliced into 24 to  26 slices
  • Enough olive oil to brush both sides of bread slices

Steps to make Bruschetta with Mozzarella Cheese Recipe Recipe:

  • Cut tomatoes into halves or quarters to obtain nice bite size pieces.
  • Place tomatoes in a glass mixing bowl with the minced garlic, chopped basil leaves, Balsamic glaze and vinegar, olive oil, salt and pepper, stirring to mix.

  • Cover the bowl with tomato mixture and store in refrigerator until ready to serve (at least an hour gives the best results).

  • Slice the baguette diagonally into about 24 to 26 slices.
  • Keep these slices in a sealed container or sealed plastic bag until just before you are ready to serve.
  • When ready to complete the recipe for serving preheat oven on broil setting.
  • Slice Mozzarella cheese so you have enough for the bread slices (some may need to be cut in half).
  • Brush both sides of bread slices with olive oil.
  • Place them on a baking sheet and slide under broiler for just a minute or so watching closely until they are golden brown.

Bruschetta with Mozzarella Cheese Recipe

  • Remove the bread slices from oven turn them over and top each slice with a slice of cheese.
  • Return to oven for just another minute or so, watching closely just until the cheese melts.
  • Remove from oven, garnish each bread slice with a little of the tomato mixture.
  • Serve and enjoy!
