Balsamic Tomato, Onion, Cucumber Salad Recipe

This Balsamic Tomato, Onion, Cucumber Salad recipe is simple, quick and frugal to make. This crunchy tangy salad is a great side to go with any meal. As with all recipes most of the fun is playing around with the ingredients to suit your taste and make it your own. Sometimes when I make this salad I add a little fresh basil or a little dried oregano to give it a little extra flavor. We can also add a little good Mozzarella cheese. Here is a list of ingredients for this Balsamic Tomato, Onion, Cucumber Salad Recipe:

  • 5-6 Medium Plum Tomatoes
  • 1 small red onion, peeled, cut in half lenghtwise and thinly sliced
  • 1 medium cucumber, quartered lengthwise and thinly sliced
  • salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoon Balsamic Vinegar

Steps to make Balsamic Tomato, Onion, Cucumber Salad Recipe:

  • Place slice veggies in a small-medium sized bowl.
  • Sprinkle salt and pepper over them.
  • Drizzle olive oil and balsamic vinegar over the top.
  • Toss lightly to mix.
  • Refrigerate for at least 30 minutes before serving to give the flavors time to mesh.
  • Serve and Enjoy!
